Yes, it's because of assistance. The French look at the factual subject more than the grammatical.

I think Chris is correct, you would only make the agreement with "un peu" if you wanted to put the emphasis on the smallness of the amount.

Après assez de, autant de, beaucoup de, combien de, énormément de, pas mal de, moins de, peu de, un peu de, plus de, trop de, l’accord se fait en général avec le nom qui suit : "Autant de neige est tombée cette année que l’an passé." 

Il arrive que l’accord se fasse au masculin singulier lorsque c’est sur la quantité que l’on veut insister : "Le peu de qualités qu’il a montré l’a fait renvoyer" (ce ne sont pas les qualités qui l’ont fait renvoyer mais leur nombre limité).

Similarly, Grevisse gives these contrasting examples:

"Un peu de neige était encore tombée."

"Lorsqu'un peu de confiance se fut établi entre nous"

I think there is a mistake? It has translated dimanche as thursday in the first sentence?
