I’m wondering if there’s a logic for having a singular beetroot in this phrase? Usually you’d make it with more than one, as with "tarte aux pommes"

Some ingredients are treated as incountable lumps (à betterave) in contrast to others (aux pommes). I don't have a better explanation than that's just the way it is.
