Compound nouns with à and de

Hi, why in this phrase  (le tatin de légumes) they used ´de and not aux légumes?

You use à when the ingredient is not the main ingredient of the dish but kind of lends it the flavor or taste ("made with"): une glace à vanille, une soupe à l'oignon, du pain aux céréales, etc.

You use de if it is the main ingredient ("made from"): un jus d'orange, une salade de patates, etc.
