The translation for "the latest season" is given as "la dernière saison." When reading the grammar lesson for dernier, I thought this would mean the final season of the show (i.e. the show has concluded and they are not planning to produce anymore seasons). 

I had interpreted "the latest season" to mean the most recent (i.e. previous) season, so I used "la saison dernière" but this was marked incorrect.

Can someone explain further? Thanks!

Bonjour Elysia,

In the context of this exercise, "une saison" refers to a season of a TV series, not a season of the year. So it's not a time phrase. The lesson explains that "With non time-related nounsdernier is not used to express previous, only final or latest. Therefore, it always comes before the noun."  So, when "dernier/dernière" is used with nouns that aren't time expressions (like a TV show season), "dernier/dernière" is placed before the noun meaning "latest" or "final" while being placed after the noun means "previous" and only applies when it's a time-related phrase (like "l'année dernière" = "last year").

Also, in French, to refer to the final season (as in, no more seasons will follow), you'd often use "la toute dernière saison" or "la saison finale".

It is tricky, so I understand your point.

There have been several of these shows, but the current one has concluded, hence "la dernière saison"

If there were to be one show after another, then I think your point would be valid in terms of expressing time. Imagine that you are waiting for the next bus to arrive (a scheduled event), for example.
