Les œufs en chocolat

So, the lesson on combining nouns says to use some form of à when describing a taste and the lesson gives the example of "glace à la vanille."  That seems consistent with my memory of "pain au chocolat."  So why is it "les œufs en chocolat" and not "au chocolat"?  Thanks.

So, the difference is that vanilla ice cream is a flavor but has other ingredients other than vanilla. By contrast, a chocolate egg is made entirely of chocolate so it's not just the flavor of the egg but the material used to make it, right?

Les oeufs en chocolat -- the eggs made of chocolate/the chocolate eggs.
