Est-ce que quelqu'un m'explique:

Le phrase est 'le premier vol qui nous plairait'; pourqoui n'est pas 'le premier vol que nous plairait'?

It is qui because that is the subject of the subordinate clause. In the English translation, however, it is the direct object. The French construction is more like the one in parenthesis below:

Qu'est-ce qui te plaît ? -- What do you like? (What pleases you?)
