Bonjour Ulrike,
In the context of expressing the sense of smell, you will first use "sentir".
However, you may use "avoir l'odeur de [quelque chose]" if you want to have a specific smell :
Je veux avoir l'odeur de la vanille dans mon parfum. = I want to have the smell of vanilla in my perfume.
