I hope that I understand your query correctly.
Vingt is a noun whereas grand is an adjective.
Je becomes J' before the vowel a of ai whereas je remains as je before s consonant of suis

"J'ai" is a fixed form due to the vowel starting the verb "avoir" (ai), whereas "Je suis" keeps "je" because "suis" starts with a consonant. The consonants within the subsequent words ("vingt" and "grand") affect liaisons or pronunciation of their own final letters, but not the "je/j'" part.
