Why use elles sont instead of ce sont?

Why are the sentences  "Elles sont belles" and "Elles sont aussi bonnes..." using elles instead of c'est/ce sont?

This question relates to:French interactive reading exercise "Petit Ours Brun fait des crêpes"

This is a specific statement about the crêpes they have just made and are holding, so “Elles sont belles”

"C'est" vs "Il/Elle est" to say it is/she is/he is in French
