Why is it les for his pockets? I understand it has to be les for hands as is a body part,  but why not ses poches?

Good catch! Yes, in French you'd rather say les mains dans les poches than les mains dans ses poches. Only if you want to emphasize that it were, indeed, his pockets you'd use ses poches.

Just think of it idiomatically: les mains dans les poches -- hands in the pockets.
