Bonjour James,
In "jus de fruits", "fruits" takes an -a as it is implied that the juice is made using several types of fruit. This is not the case when you know the juice is made using a specific type of fruit.
Un jus de fruits = A fruit juice
Un jus de légumes = A vegetable juice
Un jus de pomme = An apple juice
Un jus de raisin = A grape juice
I hope this is helpful.
Bonne journée !
