I don`t understand why this sentence ("She hid until he left." ?after) could not be the second sentence below just as much as it could be the first one....

Bonjour Ann,
Elle s'est cachée jusqu'à ce qu'il parte. = She hid until he left.
-> simultaneous actions (hiding and the leaving are happening at the same time)
Elle s'est cachée jusqu'à ce qu'il soit parti. = She hid until (after) he left.
-> the hiding happened until after he was gone
