Why not juste au cas as in the first example you give?

In all the examples in that lesson I find only au cas où, never only au cas (without the ). What exactly are you referring to?

Hi Rhona, Think your typo 'juste au cas' distracted from the real question you are asking. Just as in English you can say "in case(of)/JUST in case (of)", the same applies in French apparently. With no impact grammatically. As for your typo Patrick/Celine are of course right... it is always 'au cas 

où with or without the juste.
