I am unable to get the meaning in the dictionary.

Like Steve said, it is an idiomatic expression here, literally meaning what do you have of good.
The reason it's "de bon" in my opinion, is that it refers to another structure: quelque chose de + [adjective] = something [adjective].
-> quelque chose de bon = something good

The lady is asking the market seller "what's good today?".
Meaning "what's fresh?" or what she might recommend for purchase.

I am curious to know why the expression is not “Des bons” as we may use it in a plural sense to ask the things available fresh with the vegetable vendor.

Honestly I think it's just a turn of phrase.
Even in English we would ask "what's good" and not "what [vegetables] are good".
