why is it: ils ont des dollars et des euro. 

Why use des, not les as money is coutable?

Just as in English it would be ' they have (some) dollars and (some) euros', it is ' ils ont des dollars and des euros '. In English 'some' may be left out, but in French ' des ' cannot be left out.

Du/de la/de l'/des = Some/any (French Partitive Articles) 

Using le, la, l', les before nouns when generalising (definite articles)
