Please can you explain the difference between these which both mean "we go". When is it correct to use "on" instead of "nous"?

You can treat "on" as an informal version of "nous" in such context, similar (but not exactly the same) as what "tu" is for "vous".
"On" can have other translations depending on context, not all usages of "on" means "we". However, all usages of "nous" means "we".
