If I am sure about which salad I am eating, I would still say 'Je mange de la salade,' 'Je mange une salade,' or 'Je mange la salade.' What is the difference?

I still don't understand that when you will you change the first é of the verb or the second é becomes è , because when i read your examples i saw: préfère, répèter ,celébrate ,élève,.... Thank you

Please help me understand why the response in the following example isn't "J'en pense la plus grande bien!" Is "plus grand bien" a colloquial and unmodifiable phrase? Merci !
